Restaurant Inspections: Live Roaches Found in Dry Storage

Restaurants in the Lawrenceville area score from a high of 100 to a low of 72 on recent Gwinnett County health inspections.

Violation of Code: [.03(5)(j)1&2 ] Employees eating in food prep and/or storage areas. Observed PIC eat black beans at prep station. Employees should not eat in food prep or storage area. Educated person to not eat in kitchen. Corrected On-Site. New Violation.

Violation of Code: [.06(2)(o) ] Observed a mop head in kitchen handwashing sink. Hand sinks should only be used for handwashing. Mop head was removed at time of inspection. Corrected On-Site. New Violation.

Violation of Code: [.07(3)(b) ] No paper towels were present at the handwashing sink. Must provide paper towels at handsink at all times. Provided paper towels at the time of inspection. Corrected On-Site. New Violation.

Violation of Code: [.05(7)(a)1 ] The shoot to the ice machine had mold. A food processor was also found with food debris. Several bowls were found in storage that had debris and water in them. All equipment and utensils should be clean to sight and touch. New Violation.

Violation of Code: [.05(6)(n) ] Observed PIC rinse a soiled spoon in the meat sink then place spoon with clean utensils. Utensils should be wash, rinsed, and sanitized. Utensil was washed at the time of inspection. New Violation.

Violation of Code: [.04(6)(g) ] Observed no date marking for any potentially hazardous ready-to-eat foods held in establishment for more than 24 hours (cooked pork, pork, opened ham, sliced cheese, cooked beans). RTE PHF that are held for more than 24 hours should be date marked.  Repeat Violation.

Violation of Code: [.07(6)(l) ] At the time of inspection a large chemical bottle of Orth was being stored in facility above a bag of opened rice. Ortho spray was not being used by the label. Restricted pesticides should not be used in facility. Pesticide was removed from facility. Corrected On-Site. New Violation.

Violation of Code: [.07(6)(c) ] A bottle of Downy was found on the prep table. Pesticide was stored above rice. Chemicals should not be stored above food or food prep areas. Chemicals were removed. Corrected On-Site. New Violation.

Violation of Code: [.04(4)(g) ] At the time of inspection the fruit and vegetable sink had soiled dishes in them. Fruit and vegetable sink should only be used to wash only fruits and vegetables. Dishes were removed and sinks were sanitized. Corrected On-Site. New Violation.

Violation of Code: [.05(1)(a) ] Materials used in the construction of food equipment not safe, durable, corrosion-resistant, and/or nonabsorbent. A knife that was painted on exterior had paint chipping off of it. Materials must be durable, safe, nonabsorent, and corrosion-resistant. Advised person in charge not to use knife. Knife was removed from facility. Corrected On-Site. New Violation.

Violation of Code: [.06(1)(h),(i) ] Not enough hot water to meet the peak water demands of the food service establishment.Facility did not have hot water due to hot water heater not working. Hot water should be provided to all sinks. New Violation.

Violation of Code: [.06(2)(r) ] At the time of the inspection the water heater was not working. No hot water provided to facility. New Violation.

Violation of Code: [.07(5)(a),(b) ] Perform detail cleaning of all floors, walls, and sides of equipment (behind stove, in walk-in cooler, in walk-in storage unit). Must maintain and keep facility clean from debris. New Violation.

Violation of Code: [.07(5)(k) ] Numerous live roaches were found in dry storage cooler at the time of inspection. Pest must be controlled. New Violation.

Violation of Code: [.07(2)(m) ] At the beginning of the inspection the back door was left open with no protection from insects, pest, or rodents. Facility's outer openings should be kept protected from insects, rodents, and pest. Doors were closed the time time of inspection.  Corrected On-Site. New Violation.

Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41oF (e.g., sour cream, multiple cheeses, portioned salsa, corn relish); no time controls/documentation in place. Must hold at 41 deg. F or less. Food above 41 deg. F DISCARDED. Corrected On-Site. Repeat Violation.

Violation of Code: [.06(1)(h),(i) ] Hot water heater not meeting hot water demands of facility. No warm water at two kitchen handwashing sinks, vegetable prep sink, restroom handwashing sink. Warm water available at chicken prep handwashing sink & warewashing sink. After some time, warm water recovered at vegetable prep sink & two kitchen handwashing sinks. After heavy use of hot water, the water runs cold according to the manager. Facility contacted a plumber to address problem. There must be sufficient hot water supplied to meet the peak demands of the facility. New Violation.
