Wing Restaurant Reinspected After Roach Was Found: Restaurant Inspections Dec. 20

J Buffalo Wings scored slightly better on a follow up. Mellow Mushroom and Gary's Bistro in Lawrenceville, Ga. were also inspected.

Food contact surfaces should be cleaned at a frequency to preclude the build-up of food debris. Increase cleaning frequency. Corrected On-Site. New Violation. 12A, Violation of Code: [.04(4)(u) ] Cut lemons for self service at drink station without adequate sneeze guard. Lemons were taken from area to be placed in single use containers w/ lids for self-service. Foods for self-service must be adequately protected from possible contamination (sneezing, coughing, etc.). Instructed person in charge in proper cooling methods and requirements. Make certain that anyone left in charge of the facility is familiar with food safety requirements. Corrected On-Site. New Violation. 6-1C, Violation of Code: [.04(6)(d) ] Two containers of rice cooked on 12/19 (yesterday) were above 41 degrees. Rice was discarded. Person in charge and employees were instructed in proper cooling methods (shallow pans, ice baths) for cooling large amounts of rice. Monitor cooling temperatures and make certain that rice is cooled from 135 to 70 within 2 hours and 41 degrees within 6 hours. Corrected On-Site. Make certain that wet wiping cloths are placed back in the sanitizer when not in use. Corrected On-Site. New Violation. 16B, Violation of Code: [.06(2)(j) ] Mop sink does not have a backflow prevention device and a hose is connected to it. Install a backflow prevention device (may be called a "pressure regulator" or "vacuum breaker" at the hardware store). New Violation. 17C, Violation of Code: [.07(5)(a),(b) ] Floor under and behind the ice machine and fryers shows a build-up of dirt and food debris. Detail cleaning needed. New Violation.
