Popeye's in Lawrenceville scored a perfect 100 on their last routine inspection before scoring a U.

Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] Manager no maintaining a high level of control over risk factors. Educated manager on risk factors missed and how to control them in the future. Manager must perform responsibilities adequately.  Corrected On-Site.  New Violation. 2-1B, Violation of Code: [.03(5)(c) ] Employee washed hands, dropped paper towel on the ground, picked it up, and then went back to working with food with no hand wash. Had employee stop and wash hands. Employee moving dirty cardboard and flour off of pallet shelf then went to working with utensils to scoop chicken out of fryers. Had employee clean utensils touched and go wash hands. Must wash hands at proper times when working in a food service facility  Corrected On-Site.  New Violation. 2-2D, Violation of Code: [.07(3)(b) ] No paper towels at two hand sinks in kitchen area. Had employees put paper towels at the hand sinks. Must keep each hand sink supplied with paper towels.  Corrected On-Site.  New Violation. 5-1B, Violation of Code: [.04(5)(f) ] Rice not reheated properly in microwave. See temps above. Had employee reheat the rice to above 165F. Must reheat food items that your are going to hot hold properly.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Coleslaw in reach-in cooler, several containers, not being cold held properly. Moved coleslaw back to walk-in cooler to cool down. Had brought out from walk-in about 2 hours ago. Walk-in cooler temp of slaw was 35F. Must cold hold food items at 41F or cooler.  Corrected On-Site.  New Violation. 13B, .02(1)2. No smoking sign not posted properly, over the service counter. Advised manager to move so it is visible before people enter the building. Must post no smoking sign properly.  New Violation. 14A, Violation of Code: [.04(4)(k) ] Handle of scoop down in flour, handle of measuring spoons down in salt - Had manager remove from food product. Must store in-use utensils properly.  Corrected On-Site.  New Violation. 14B, Violation of Code: [.05(10)(a) ] Utensils stacked wet. Had manager rearrange so that they could air dry. Must air dry utensils before stacking them.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(6)(q) ] Small reach-in cooler not functioning properly. Air temp was 45F. Removed all PHF from the cooler. Must keep equipment in good repair. Must repair before putting potentially hazardous food items back in it.  New Violation.

Violations: 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] CROSS CONTAMINATION: Employee handled raw beef and then handled vegetables. Had to correct staff a number of times for handling raw product with one hand and tongs with the other. Facility must use a utensil to handle raw meat OR gloves must be removed and hands washed PRIOR to handling any ready to eat food. **Checked final cook temperature of sliced vegetables and it was at 198 deg. F.  Corrected On-Site.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. Raw chicken, raw steak, raw ground beef patties, hot dog above 41 deg. F. Food relocated to working refrigeration. Must hold food at 41 deg. F or less. **Drawer cooler was not working. Manager fixed it & the temperature dropped to below 41 deg. F.  Corrected On-Site.  New Violation. 17D, Violation of Code: [.04(4)(n) ] Employees using the same pair of gloves for other tasks after handling raw meat. One employee picked up wax paper with raw meat and then continued to handle equipment. If used, single-use gloves shall be used for only one task such as working with ready-to eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. **Had employees remove soiled gloves and wash hands. Had to repeatedly remind employees to remove soiled gloves & wash hands.  New Violation.
