Wall With Significant Mold Buildup: Restaurant Inspections November 13

Violations: 11A, Violation of Code: [.04(6)(e) ] Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.) Prepped food such as shredded cheese, bagged cooked chicken and pasta not being cooled effectively, after prep, before being put in bags and then the prep cooler, on the main line. Items were still within the proper cooling time frame(only cooling 1 hour). Methods need to be changed so that these are items are cooled prior to putting them on the line. Do not overstack these items on prep line. Potentially hazardous foods must be cooled by effective methods so that they can reach 70 degrees within 2 hours and then 41 degrees within 4 hours.  New Violation. 14D, Violation of Code: [.04(4)(n) ] Single-use gloves used for multiple tasks that present risk for cross-contamination. Food prep employees wearing gloves to prepare food and then used to open cooler doors and get items from the back kitchen; employees then return to the front prep line and continue food prep without discarding gloves, washing hands and putting on new gloves. Gloves are to be used for single tasks and in a way that does not present a risk for cross-contamination.
This is a repeat violation from inspection on 2/11/13.  Repeat Violation. 15A, Violation of Code: [.05(6)(b) ] Cutting boards in disrepair with significant cuts and mold build-up on them. Please replace cutting boards. Food contact surfaces must be maintained in good repair and clean.  New Violation. 15C, Violation of Code: [.05(7)(a)2,3 ] Nonfood-contact surfaces of equipment not cleaned at a frequency necessary to preclude accumulation of soil residues. Area around the coke dispenser nozzles (non-food contact portion) were unclean with significant mold build-up. Please clean equipment and ensure that these non-food contact surfaces remain clean. 17C, Violation of Code: [.07(5)(a),(b) ] Wall behind coke boxes unclean with significant mold build-up. Please clean this wall to remove mold. Walls in dishwash area still need more frequent cleaning to remove mold build-up. The physical facility must be kept clean and in good repair.  New Violation. This is a repeat violation from inspection on 2/11/13.  Repeat Violation.
