The Flying Machine Scores a B: Restaurant Inspections December 19

The Flying Machine had a couple of violations surrounding their meatloaf.

Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Multiple employee drink cups stored on/around prep areas/tables. Drinks were removed. Store employee drinks (disposable cup w/ lid/straw) in a manner/location as to prevent possible contamination to prep areas/food storage areas.  Corrected On-Site.  New Violation. 2-2D, Violation of Code: [.06(2)(o) ] Dirty utensil stored in rear hand sink at beginning of inspection. Utensil was removed. Handsinks are to be used for handwashing only, no other use is intended and/or permitted.  Corrected On-Site.  New Violation. 12BViolation of Code: [.03(5)(g) ] Employees involved in active food preparation wearing wrist watches. Watches were removed. No jewelry is allowed to be worn with the exception of a smooth band ring.  Corrected On-Site.  New Violation. 17D, Violation of Code: [.07(2)(i) ] Protective shielding missing from light panel in the dry storage area. Repair/replace within 48 hours. Light bulbs/panels should be adequately shielded to prevent possible contamination .  New Violation.

Violations: 6-1C, Meatloaf cooked yesterday did not cool down to 41F within 6 hours. Item was discarded. All potentially hazardous foods must cool from 135F to 70F within 2 hours and then down to 41F or below within an additional 4 hours.  Corrected On-Site.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Observed meatloaf in pan that had not cooled to 41F within 6 hours. Observed large container loaded full of gravy stored in walk-in cooler for cooling. Use proper cooling methods to ensure these items cool properly, such as dividing food into smaller batches and using an ice bath.  New Violation. 14D, Violation of Code: [.04(4)(n) ] Observed employee with two pairs of gloves on. Employee stirred food, removed top layer of gloves, and put on another pair of gloves to make sandwich. Corrective action: Employee removed gloves, washed hands, and put on one pair of gloves. Employees may only wear one pair of gloves at a time. Double gloving is not allowed.  Corrected On-Site.  New Violation.

Violations: 1-2, Violation of Code: [.03(2)(a)-(n) ] At beginning of inspection, no person in charge was present. Person in charge was called and arrived later during inspection. A person in charge must be present at all times when the facility is operating.  Corrected On-Site.  New Violation. 12A, Violation of Code: [.04(4)(u) ] Salsa buffet bar has no shielding on sides to protect food. Add sneeze guards to side of buffet. Food on display must protected from all sides from possible contamination.  Repeat Violation.
