Sub Shop Permit Suspended: Restaurant Inspections October 22

Jersey Mike's in Lawrenceville's permit was suspended after having the same violation for three inspections in a row.

Violations: 1-2, Violation of Code: [.03(3)(a)-(d) ] Facility not able to provide the original copy of the certified food safety manager certificate. Facility must employ a certified food safety manager and must post the original certificate for the certified food safety manager for public view.  New Violation. 6-1A, Violation of Code: [.04(6)(f) ] Cold-held potentially hazardous foods not maintained below 41oF; no time controls/documentation in place. Cut tomatoes in drop down cooler; tuna salad, chicken salad, multiple deli meats above 41 deg. F. Food within a 4 hour window re-located to walk in cooler or freezer to rapidly chill to 41 deg. F. Must hold food at 41 deg. F or less. IF THIS ITEM IS MARKED OUT OF COMPLIANCE ON THE NEXT ROUTINE INSPECTION, THEN THE PERMIT MAY BE SUSPENDED. **Person in charge removed most of the food from cooler. The ambient air temperature dropped down to 42.1 deg. F. Also, the small sliding door to cooler was open. Not sure how long it was left open before it was closed.  Corrected On-Site.  Repeat Violation. 12C, Violation of Code: [.04(4)(m) ] Used cloth towels hanging on hook outside of sanitizer solution. 
No chlorine in sanitizer solution.
Facility must store cloth towels in sanitizer solution between uses.
Facility must maintain safe, but adequate level of chlorine in sanitizer solution.  New Violation. 13A, Violation of Code: [.10(2)(g) ] Health score posted behind the service counter. Inspection report must be posted in public view within 15 feet of the primary entrance, 5-7 feet above the floor, and readable from one foot.  Repeat Violation. 17BViolation of Code: [.06(5)(o),(p) ] Trash on ground surrounding dumpster. Right dumpster missing drain plug. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean.  Repeat Violation. 17C, Violation of Code: [.07(2)(c) ] Coving installed on wall/floor juncture between counter and grill. However, it's peeling off the wall. Re-install coving. Ensure it is installed properly.  Repeat Violation.
