Several violations of risk factors observed during the inspection. Person in charge stated that he has more staff working during the weekends. However, the facility must still be maintained clean, foods must still be kept at safe temperatures and protected against contamination at all times. (Create a daily checklist of the factors which require daily monitoring to ensure there is active managerial control of the restaurant.)
