Had manager discard food items due to unknown time the food had been out of temperature - Must receive foods at 41F or cooler or 135F or warmer. Advised manager to check all food items that are potentially hazardous that are being delivered and to not accept them unless they are the correct temperature. Corrected On-Site. Evidence includes improper cooling of foods, untrained food employee in food safety, improper handwashing. Need to have a certified food safety manager on-site or someone who is knowlegeable at all times.
