A Lawrenceville elementary school is inspected and a Mexican restaurant scores higher on a follow-up.

Violations: 8-2B, Violation of Code: [.07(6)(c) ] Spray bottles filled with quaternary ammonium sanitizer are stored on the top shelf of the dry storage rack for the formula meals and packaged condiments. Remove the chemicals from this location. Ensure that all toxic substances are stored with adequate separation from food. If storage equipment is mixed use, place chemicals on the very bottom. / Manager has removed the spray bottles from the storage shelf. Corrected On-Site. New Violation. Remarks: Violation of Code: [.04(4)(u) ] Foods on display for self-service are not adequately protected: (1.) Container of croutons with lid and spoon, Container of bacon bits with lid and spoon are stored on a rolling cart placed next to the teacher's bar. There is no shielding over this spot. (2.) Cut lemons are in a container at the beverage station with lid and utensil. For each of these foods, they are no longer protected once the customer has to remove the lid to serve himself/herself. Had manager place the croutons and the bacon bits underneath the shield of the teacher's bar. Since the sour cream packets are individually wrapped, they do not need to be shielded. The food inside is protected from contamination. The lemons may be placed under shielding or provided in individual portions via 2 oz sample cups for example. All foods on display for self-service must be adequately protected by a barrier such as sneeze shielding to intercept contaminants OR offer individually packaged/wrapped portions OR place the lemons behind the counter to be dispensed by kitchen staff at the serving lines only. New Violation. 12C, Violation of Code: [.04(4)(m) ] The quaternary ammonium sanitizing solution used for the microfiber cloth table cleaning system (the Step 1 bucket) is not currently being used at the proper strength. Member of custodial staff is currently using the cleaning system. The Step 2 bucket has the proper concentration and is filled to submerge the cloths. The Step 1 bucket Quat concentration is currently below 150 ppm. Ensure Quat sanitizer is kept at the proper concentration for sanitizing food contact surfaces (generally 200 ppm OR as per the manufacturer's specifications for the upper and lower effective range, i.e. 150 ppm to 400 ppm) Had employee to refill the bucket. Corrected On-Site. New Violation.
