Repeat Violations for Fast Food Restaurant: Restaurant Inspections October 1

Applebee's on Duluth Highway was also inspected.

Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee drink cup (no lid/straw) stored on top shelf of dry goods shelving unit. Employee discarded cup. Store employee drinks in disposable cups with lids/straws and locate drink in area to prevent contamination to foods and/or dry goods/products.  Corrected On-Site.  Repeat Violation. 14A, Violation of Code: [.04(4)(k) ] In-use utensils stored in water below 135 F (see temperature observations). Utensils were removed to water storage units that were 135 F or greater. In-use utensils for potentially hazardous foods that are stored in water should be stored in water that is kept at 135 F or above.  Corrected On-Site.  Repeat Violation.

Violations: 4-2A, Violation of Code: [.04(4)(c)1(iv) ] Cooked red potatoes & cooked ribs stored uncovered in the walk-in cooler. Foods were covered. Foods stored in long term storage areas (walk-in cooler/freezer) should be kept covered to prevent possible containation.  Corrected On-Site.  New Violation.

Violations: 4-2B, Violation of Code: [.05(6)(n) ] Chlorine sanitizer in 3 compartment sink was found to be below 50ppm. The person in charge remade the chlorine sanitizer to the proper concentration. When washing food contact surfaces in 3 compartment sink the sanitizer should be at proper concentration (200-400ppm quat or 50-100ppm chlorine).  Corrected On-Site.  New Violation. 4-2B, Violation of Code: [.05(7)(a)1 ] Vegetable juicer not used in 2 days was found with food debris present on the blade and other food contact surfaces of the equipment. This item was taken apart to be properly cleaned to sight and touch. All food contact surfaces should be stored clean to sight and touch to help prevent possible contamination.  Corrected On-Site.  New Violation. 8-2B, Violation of Code: [.07(6)(g) ] Two containers of in use wet wiping cloths stored in chlorine sanitizer that was above 100ppm at the time of inspection. The person in charge remade the sanitizer to the proper concentration of 50-100ppm. Chlorine sanitizer shold be used at a concentration of 50-100ppm to properly sanitize and not be at potentially toxic levels.  Corrected On-Site.  New Violation. 18, Violation of Code: [.07(2)(m) ] Back door was open at time of inspection. Outer openings must be protected to help prevent pests from entering facility. Facility needs a tight fitting screen door in place if back door is going to be left open.  New Violation.
