At the second line the monterey cheese was holding at 54F and the pico was holding at 52F. The items on the first line were discarded and the items on the second line were placed in the walk-in cooler to reach correct temperature. Cold holding potentially hazardous foods should maintain a temperature of 41F or below. Discussed with the manager about rearranging those potentially hazardous foods. Corrected On-Site. Repeat Violation. 15A, Violation of Code: [.05(6)(a) ] Cooler doors no longer have self closures. Doors are not maintained in good condition.
