Restaurant Inspections: May 10

A Mexican restaurant and two elementary schools were inspected.

Vioalations: 5-2, Violation of Code: [.04(7)(e) ] Several menu items (steak) are not marked with the asterisk to indicate that they can be cooked to order. Huevos are marked with the asterisk in pen but the ink is wearing off and is barely visible. Reminder statement is not in ALL CAPS at bottom of page.
Owner is having new menus printed next month; instructions given on how to mark menus. Owner will send a draft version to EHS CLA to proof before they are sent to print. Menus remarked with pen until reprinted. Corrected On-Site. New Violation. 12C, Violation of Code: [.04(4)(m) ] In-use, wet wiping cloths not stored in an approved sanitizing solution (100 ppm available chlorine or 300 ppm available Quat). 18, Violation of Code: [.07(2)(m) ] Multiple flies in kitchen during inspection. Pest control services are in place but back door is opened frequently and for extended period of times during deliveries. Suggested installing an air curtain to help control flies or shut door quickly during inspections. Several gaps in bottom of door and on side of door must be corrected to prevent flies from entering. Please install weather strip on side of door and bottom of door to close gaps. Outer openings must be protected.  New Violation. Sanitizer level in wiping cloth bucket was not measureable. Chlorine level was less than 25 ppm. Manager had employee remix the sanitizer to the appropriate level (100 ppm) during inspection. Sanitizer in wiping cloth buckets must be maintained at 100 ppm chlorine at all times.  Corrected On-Site.  New Violation.
