PHF's must be cooled from 135 F to 70 F within two hours and from 70 F to 41 F in an additional four hours to prevent bacteria growth. Re-fried beans were discarded during inspection. PHF's should be cooled via shallow pans with loose coverings, ice baths, ice paddles or with ice as an ingredient. PIC was advised of proper cooling methods. Corrected On-Site. Advised PIC to clean walls and floor to prevent attraction of insects. Repeat Violation. 17D, Violation of Code: [.07(2)(i) ] Light in warewash area is missing shielding. Advised PIC to replace shielding. New Violation. 18, Violation of Code: [.07(5)(k) ] Observed several flies in the kitchen area.
