New Violation. 11A, Violation of Code: [.04(6)(e) ] Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.) - pans of beans, sauces and chicken cooling in large, covered containers at beginin of inspection. Advised PIC of proper cooling methods including shallow pans in an ice bath, using an ice paddle or any other effectibe methods. Foods were put in shallow containers and in an ice bath for proper cooling. Corrected On-Site. Repeat Violation. 15A, Violation of Code: [.05(6)(q) ] Prep cooler and walk-in cooler not maintaining 41F - ambient temperature of prep cooler at 47F and walk-in cooler at 48F. Advised PIC that coolers shall maintain 41F. Thermostat was adjust on the prep cooler and now ambient temperature is 39F. A repairman was called for the walk-in cooler. New Violation.

Use smaller pans, thinner pans, ice baths, vent food with no overhead contamination, store in coldest section of cooler, etc. Do not store hot food actively cooling near food at 41 deg. F or less.
