Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Two opened employee water bottles (twist-off tops) stored on top of prep cooler at beginning of inspection. Employee drinks should be stored in disposable cup with lid/straw & be stored in a manner as to prevent possible contamination to patron foods, prep areas, utensils, single-use articles, etc. Water bottles were discarded.  Corrected On-Site.  Repeat Violation. 2-2D, Violation of Code: [.07(5)(h) ] Build-up of grease/grime in basin of handwash sink in kitchen. Handwashing sinks should be cleaned at a frequency to preclude the build-up of grease/grime. Sink was cleaned/sanitized during inspection.  Corrected On-Site.  New Violation. 6-2, Violation of Code: [.04(6)(g) ] Eggrolls in walk-in cooler/3-door reach-in cooler & cooked chicken in 3-door reach-in cooler held over 24 hours (cooked on 6/10 am as per PIC) were not properly date marked. Cooked potentially hazardous foods that are held over 24 hours should be marked with the date of preparation and/or date by which the food shall be sold, consumed and/or discarded. Foods were date marked during inspection.  Corrected On-Site.  New Violation. 17D, Violation of Code: [.07(4)(b) ] Cigarettes, cell phone & lighter stored on preparation area in kitchen. Employee personal items should be stored in a manner/location as to prevent possible contamination to foods, preparation areas, single-use articles, etc. Items were removed from preparation area during inspection.  Corrected On-Site.  New Violation.

Violations: 6-1C, Violation of Code: [.04(6)(d) ] Beans were not cooled to 41F within 6 hours. CFSM stated the beans were cooked at 10pm last night; they were cooled using a deep metal pan, in an ice bath & with an ice paddle & then placed into the upright cooler. Beans were discarded at the time of inspection. Cooked potentially hazardous food (time/temperature control for safety food) shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C). **IF THIS ITEM IS MARKED OUT OF COMPLIANCE ON THE NEXT INSPECTION, THE PERMIT MAY BE SUSPENDED FOR 3RD REPEAT VIOLATION.  Corrected On-Site.  Repeat Violation. 11D, Violation of Code: [.05(3)(g) ] Small diameter probe thermometer is broken. A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.  New Violation. 15A, Violation of Code: [.05(1)(a) ] Facility is using painted plastic bags to press tortillas. CFSM gave employee wax paper to use instead of the painted bags. Materials that are used in the construction of utensils and food-contact surfaces of equipment may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be safe, durable, corrosion-resistant, and nonabsorbent.  Corrected On-Site.  New Violation. 15C, Violation of Code: [.05(7)(a)2,3 ] Sticker residue left on food containers. Grease/buildup on the cookline equipment. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  New Violation.
