A couple of restaurants at the Avenue at Webb Ginn in Lawrenceville, Ga. were inspected. How did they do?

PHF's should be cooled from 135 F to 70 F in two hours and from 70 F to 41 F in an additional four hours (six hours total to cool to 41 F). Chili was discarded. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] Chili cooling in walk-in cooler in deep pan with tight cover. Proper cooling methods include shallow pans with loose coverings, ice baths, ice paddles and using ice as an ingredient during the cooking process. Violations: 6-1A, Violation of Code: [.04(6)(f) ] Three containers of diced tomatoes cold holding in lower salad prep cooler at 50 F. Foods that are to be cold held should be cold held at 41 F or below to prevent bacteria growth. Foods were discarded. Air flow to bottom drawers of prep cooler was blocked by trays of lettuce and a metal tray beneath the lettuce trays. The metal tray was removed below the lettuce trays and PIC advised that only one lettuce tray would be stored in each drawer in order to not restrict the air flow to the bottom prep cooler drawers. Final ambient air temperature in the prep cooler drawers was 40 F. Corrected On-Site. New Violation.

Advised PIC to use a proper method of cooling foods such as spreading out in a single layer and placing in the cooler or an ice bath or any other approved method. Foods were spread out on baking sheets and placed in the walk-in cooler for cooling. Corrected On-Site. New Violation. 15A, Violation of Code: [.05(1)(a) ] Bottom shelves of prep tables are lined with cardboard. Advised PIC to remove cardboard so that shelving will be easily cleanable.  New Violation. 15C, Violation of Code: [.05(7)(d) ] Fryers, wok station, cooler handles, shelving and bulk containers have buildup of grease/food debris. Advised PIC to increase cleaning frequency to reduce buildup. New Violation.
