Restaurant Inspections: February 20

The following are restaurant health inspection scores as reported by Gwinnett County:

Violations: 2-1B, Violation of Code: [.03(5)(c) ] Employee was observed breading raw chicken, removed gloves then immediately donned new gloves to bread raw beef. Hands were not washed before donning gloves to work with food. Hands were washed.  Corrected on-site. New Violation. 2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee was observed eating from a bowl while on the prep line; employee was observed eating while frying the foods. Employees eating in food prep and/or storage areas. Employee ceased eating.  Corrected On-Site.  New Violation. 5-1A, Violation of Code: [.04(5)(a) ] Raw chicken breast internal cook temperature in the thickest portion is 160°F. Poultry, wild game animals, stuffed fish, stuffed meat, or stuffed pasta not cooked to an internal temperature of 165°F or above for 15 seconds. Chicken was returned to the grill for additional cooking, the final temperature was 176°F.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] Diced tomatoes cooling since 11:00 a.m., temped 45°F at 3:30 p.m.; hush puppie mix cooling since 11:15 a.m., temped 46°F at 3:30 p.m. Potentially hazardous foods prepared from products at ambient temperature not cooled to 41°F within 4 hours. Foods were discarded.  Corrected On-Site.  New Violation. 11A, Violation of Code: [.04(6)(e) ] Cooked squash cooling in tightly wrapped and stacked containers for three hours at 67°F. Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). Food was partially covered.  Corrected On-Site.  New Violation. After discussion with the PIC, one brush used in contact with different raw animal foods without being washed, rinsed, and sanitized between uses. Person in charge was informed to cease current methods and adopt methods to ensure foods are properly separated and protected.
The front display cooler contains foods that are not for consumption.
