Beans made the day before cooling in large pot at 66-76 deg. F. Product in the two door cooler. Person in charge stated that they use an ice bath to cool the beans down & then they put them in the cooler. Potentially hazardous food must be cooled from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hrs. Monitor cooling process. Beans DISCARDED. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] Potentially hazardous foods not properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). Beans cooling in large pot in 2 door cooler. Potentially hazardous foods must be properly cooled by effective methods(shallow pans, ice water bath, adding ice as an ingredient, etc.). Ensure cooling method is effective in cooling food from 135 deg. F to 70 deg. F within 2 hrs and from 135 deg. F to 41 deg. F within 6 hrs. New Violation. 17C, Violation of Code: [.07(5)(a),(b) ] Damaged floor tile below warewashing sink. Coving peeling from wall or missing by back door. Repair peeling coving. Re-install missing coving. Ceiling dripping water (condensation from AC). Prep table with cutting board and knife right below although food not being prepared at time of inspection. Move table to protect food during prep until ceiling is repaired. New Violation.
