Violations: 2-2B, Violation of Code: [.03(5)(j)1&2 ] Employee water bottle with twist off top stored on top of prep cooler above food products to be served to customers. Employee drinks should be kept in disposable cups with tight fitting lid/straw and be kept separated from food products and/or single service articles. Water bottle was discarded. Corrected On-Site. New Violation. 10B, Violation of Code: [.04(3)(f) ] Ice being made at employee's home and brought to the facility to be served to the customers. Ice must be made on site or purchased from an approved site. Advised PIC to cease from using ice from unapproved source. Corrected On-Site. New Violation. 11A, Violation of Code: [.04(6)(e) ] Cooked cabbage cooling in deep pan with tight fitting lid. Approved methods for rapid cooling include shallow pans that are loosely covered, ice baths/ice paddles and using ice as an ingredient. Cooked cabbage was put onto an ice bath to finish cooling.
