Live Roach with Egg Sac Found at Lawrenceville Chinese Restaurant: Restaurant Inspections October 7

Another Lawrenceville restaurant was cited for undercooked chicken.

Violations: 6-1B, Violation of Code: [.04(6)(f) ] Chicken breasts not maintained at 135F or higher. Discarded the chicken breasts from the warmer. Foods held hot for safety must be maintained at 135F or higher.  Corrected On-Site.  New Violation. 6-1C, Violation of Code: [.04(6)(d) ] TCS foods not cooled to 41F or less within six hours maximum: Marinara sauce and pork ribs. Had employee discard batches of this food. Time/temperature controlled for safety foods must be cooled according to the parameters established by the food service regulations: First cool the food from 135F to 70F within two hours. Then continue cooling the food from 70F to 41F or less within the remaining four hours for a total cooling time of not more than six hours. 2ND CONSECUTIVE VIOLATION OF CODE SECTION  Corrected On-Site.  Repeat Violation. 11A, Violation of Code: [.04(6)(e) ] (1.) Deep container used for cooling sauce. Use smaller containers to divide large batches of TCS foods into smaller portions for cooling. (2.) Hard boiled eggs are cooling submerged in ice water. Some of the shells have cracked. Allow hard boiled eggs to air cool with the shells intact by pouring away the water in which they were boiled OR place the eggs into a strainer basket which allows the melted ice to drain away. (3.) Pork ribs were not placed in a single layer to cool down on metal sheet pan. Place the food in as flat as possible in a single layer to allow rapid cooling. Kitchen manager has corrected the cooling methods for each food item. Approved methods for cooling foods must be used at all times to include adding ice as an ingredient, using shallow pans, placing the food into an ice bath, etc.  Corrected On-Site.  Repeat Violation. 15A, Violation of Code: [.05(6)(a) ] Walk-in cooler is leaking at the ceiling (along the wall behind the shelving under the fan unit). Repair the leak. All equipment must be maintained in good repair.  New Violation.

Employee handling cooked pork with bare hands; same employee handling washed/cut vegetables with bare hands. Food DISCARDED. Employees must use a barrier (like single use gloves, a utensil, or wax paper) when handling ready to eat foods.  Corrected On-Site.  New Violation. 4-1A, Violation of Code: [.04(4)(c)1(i)-(iii),(v),(viii) ] Raw chicken above beef; raw shrimp above ready to eat food (e.g., imitation crab); raw duck above raw beef. Had facility reorganize items in walk in freezer according to cook temperature. Facility must store raw foods according to cook temperature. Had facility add ~100 ppm chlorine to sanitizer solution for cloth towels. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; 3. Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; and 4.
