All potentially hazardous foods not being maintained at 41 degrees Fahrenheit or below for less than 4 hours were placed in walk-in cooler to rapidly cool. All cold-held potentially hazardous foods not being maintained at 41 degrees Farhenheit or below for more than 4 hours were discarded. Must ensure all cold-held potentially hazardous foods are maintained at 41 degrees Fahrenheit or below.  Corrected On-Site.  New Violation. 12C, Violation of Code: [.04(4)(m) ] In-use, wet wiping cloths not stored in an approved sanitizing solution (100 ppm available chlorine or 300 ppm available Quat). At time of inspection, concentration of sanitizer for sanitizing buckets too low (below 100 ppm for quat sanitizer). Technician arrived during inspection to work on dispenser. Sanitizer provided for sanitizing buckets at proper amount of concentration. Advised person in to ensure proper concentration of sanitizer is provided at all times for sanitizing buckets and manual dishwashing procedure.  Corrected On-Site.  Repeat Violation. 15A, Violation of Code: [.05(6)(q) ] At time of inspection, 2-door cooler located next to handsink in kitchen area not maintaining proper temperature (ambient air at 46 degrees Fahrenheit). Advised person in charge not to use cooler until repaired.  New Violation.
