Dead roaches were found in a cooler at the buffet restaurant. Also, La Cazuela scored an A.

Cooked potentially hazardous foods held in the facility over 24 hours should be marked with the date of preparation and/or date by which the products should be sold, consumed or discarded. Equipment/utensils should be air dried prior to stacking to prevent possible bacteria growth. Exterior of equipment should be clean to sight/touch and be free of label debris/label residue. Items were re-cleaned during inspection.  Corrected On-Site.  New Violation.

Violations: 4-2B, Violation of Code: [.05(7)(a)1 ] Ice machine with black/pink mold like substance around ice chute. Food contact surfaces should be clean to sight/touch. PIC advised that ice machine will be cleaned within 24 hours. An informal follow-up will be conducted within 10 days.  Repeat Violation. 6-1C, Violation of Code: [.04(6)(d) ] Two containers of white rice cooling in the walk-in cooler since yesterday 5/13 not cooled to 41 F in six hours or less. Cooked potentially hazardous foods should be cooled from 135 F to 70 F in two hours and from 70 F to 41 F in an additional four hours. Foods were discarded.  Corrected On-Site.  Repeat Violation. 6-1D, Violation of Code: [.04(6)(i) ] Multiple items are on the buffet being held under time control that are not listed on written procedures: white fish, chicken nuggets, crab rangoons, shrimp/corn, crawfish, spicy chicken, stuffed mushrooms, hibachi special beef, stuffed potato, rice pudding & on the sushi area: Mexican roll, spicy crabmeat, seaweed roll, fried fish roll & tofu skin. All items on the buffet under time control should be on the written procedure. Items were added to the written procedure.  Corrected On-Site.  Repeat Violation. 11A, Violation of Code: [.04(6)(e) ] Rice & chicken cooling in deep pans with tight fitting lids. Approved cooling methods include shallow pans, loose coverings while cooling, stirring, ice paddles, etc. Rice was discarded, PIC placed chicken on sheet trays to continue rapid cooling.  Corrected On-Site.  Repeat Violation.

Had manger clean machine. Manager decided to move stove and heat the container of water to greater than 135F.
