Chick-fil-A Near Perfect on Re-inspection: Restaurant Inspections May 20

The location on Sugarloaf Parkway scored a C last week. Green Tomato was also checked again.

The following are restaurant health inspection scores as reported by Gwinnett County:

Violations: 4-2B, Violation of Code: [.05(6)(n) ] The quat sanitizer in the 3 compartment sink was found to be below 200ppm at the time if inspection. The person in charge drained the sink and refilled the sanitizer to the proper concentration of 200-400ppm. All sanitizers should be used at the proper concentration (chlorine 50-100ppm, quat 200-400ppm) to properly sanitize and not be at potentially toxic levels.  Corrected On-Site.  New Violation. 6-1B, Violation of Code: [.04(6)(f) ] Several pieces of the grilled chicken hot holding above the stove and a pan of cooked peppers and onions in the hot holding unit were found holding below 135 degrees. These items had been out for less than 2 hours and were reheated to above 165 degrees at the time of inspection. All potentially hazardous food items not in time as a public health control must be held at 135 degrees or above to help prevent possible contamination.  Corrected On-Site.  New Violation. 6-1D, Violation of Code: [.04(6)(i) ] Time control is being used for potentially hazardous food items such as sliced tomatoes, diced tomatoes and items were still being used after the time expired. The person in charge discarded all the items that time had expired. All items on time control must be marked with discard times not to exceed 4 hours and must be discarded on or before this time.  Corrected On-Site.  New Violation. 14B, Violation of Code: [.05(10)(a) ] Several metal pans were observed stacked clean with large amounts of water present. The pans were removed to be rewashed and air dried. The person in charge was advised to allow for air drying after properly washing the equipment and utensils.  Corrected On-Site.  New Violation. 15A, Violation of Code: [.05(6)(q) ] Two tongs stored as clean were not in good repair with broken and taped up handles. The person in charge discarded these two utensils. All utensils should be maintained in good repair.  Corrected On-Site.  New Violation.

Currnet inspection report must be posted in public view within 15 feet of the primary entrance, 5-7 feet above the floor, and readable from one foot. The employee decided to post the report.  Corrected On-Site.  New Violation.

Potentially hazardous foods must be properly cooled by effective methods (shallow pans, ice water bath, adding ice as an ingredient, etc.). The employee decided to move the foods to different location in the walk-in cooler and transfer the cheese to smaller containers.  Corrected On-Site.  New Violation. 13A, Violation of Code: [.10(2)(g) ] Inspection report with a score of 82 is posted instead of current score of 73. Current inspection report must be posted in public view within 15 feet of the primary entrance, 5-7 feet above the floor, and readable from one foot.  New Violation.
