Violations: 6-1D, Violation of Code: [.04(6)(i) ] The entire second batch of grilled chicken (three full pans) have been forgotten in the steam oven. They were placed into the steam oven some time earlier. But, they were not labeled and documented on the log sheet. The time of completion for the reheating process is unknown and the final temperature is unknown. The grilled chicken was observed to be 108F - 113F. Unsure of how long the food has been held at this temperature. Discard this chicken. Ensure that all of the food items held under time control are labeled AND documented on the log sheet. Kitchen manager has instructed employee to throw away the grilled chicken. Corrected On-Site. New Violation.
